By Jeff DupuisWith the colder weather upon us, nothing warms the body like hot, slow cooked comfort food. Here is my favorite fall recipe for delicious paleo chili. Step 1: fully cook ground beef in a giant pan with olive oil Step 2: dice all the vegetables Step 3: lightly sauté mushrooms, onions, peppers, celery in olive oil Step 4: Empty both cans of diced tomatoes in the slow cooker and turn the slow cooker on high Step 5: add the cooked beef to the tomatoes (optional, add pasta sauce to thicken the chili.) Step 6: add the spinach on top of the beef, it will take up lots of room until it starts to steam so don’t worry about space Step 7: add sautéed veggies to the mix as well as the green onion and your favorite spices, we used garlic salt, vegetable, Cajun oregano and rosemary. Step 9: set timer for 4 hours and stir occasionally if possible Step 10: Enjoy!
