ZONE PALEO PANCAKES

Take your breakfast to the next level with these amazing, protein packed zone, paleo pancakes. 

​They can be stored in an airtight container in the fridge for up to a week, taste delicious reheated, and are an easy on the go breakfast. 
INGREDIENTS:  
Recipe makes 6 pancakes, each pancake is 1 zone block
- 2 Banana's (Ripe)
- 6 Eggs
- 2 Tbs Cinnamon
- 1 Tsp Vanilla Extract
- 1 Tsp Coconut Oil
If the banana’s aren’t’ ripe, peel them and place on a microwave safe plate. Microwave them for 2 minutes to soften.

​1) In a large bowl combine bananas, eggs, cinnamon and vanilla. An immersion blender works like a charm to break everything up, otherwise you can mix the ingredients in a mixer, food processor, or with a fork.
2) Heat griddle to medium heat, then place coconut oil on the griddle. Pour the pancake mixture onto the griddle forming 6 pancakes.

3) Let them sit until small bubbles form on the top of the pancakes (about 3 minutes), then flip once. Allow the pancakes to cook through for about another 2 minutes.
I like to store them in an airtight container and save the extra’s for a quick on the go breakfast. They taste great re-heated, and stay for about a week in the fridge.

(approximate per pancake) 
2/3 Banana - 1 Block Protein
1 Egg - 1 Block Carb
1/3 Tsp Coconut Oil - 1 Block Fat
